Tomato Egg Drop Soup with Masala Drops

This soup is perfect for a cold winter day or anytime you’re craving something warm and comforting. Even for weight watchers, this is a great weeknight dinner recipe that takes minutes to cook.

Ingredients:
2 cups chicken or vegetable stock
3 large tomatoes diced
1-2 garlic Masala Drops
3-4 ginger Masala Drops
1 tablespoon soy sauce
Salt to taste
2-3 black pepper Masala Drops
3 eggs, lightly beaten
A handful of spring onion chopped
1 tsp vegetable oil
1 tsp corn flour

Instructions:
Cut the tomatoes and sprinkle salt over them and keep for 10 minutes.
In a pot, heat oil and add the white part of the spring onion, and saute for two minutes.
Add the diced tomatoes with all the juices and let them cook over low heat till the tomatoes soften.
While the tomatoes are cooking, add ginger and garlic drops.
Once the tomatoes have softened, add chicken or vegetable stock.
Let this boil and then simmer, while you add soy sauce.
Then make a slurry of corn flour with half a cup of water and add this to the soup.
Add black pepper Masala Drops and then let this come to a boil.
Finally, adjust the salt and add sugar if needed.

In a medium pot, bring the broth, diced tomatoes, garlic, soy sauce, salt, and black pepper to a boil.
Reduce heat to medium-low and let the soup simmer for 5 minutes.
Beat the 3 eggs in a bowl.
Slowly pour the beaten eggs into the soup, stirring gently with a fork to create egg ribbons.
Add sliced green onions and cook for an additional 1-2 minutes.
Serve hot and enjoy!
